What it actually is

Cream base and liquid nitrogen churned to order. The appeal is equal parts texture and theatre — the vapour cloud is the reason it is booked, and it is genuinely a better ice cream than a scooping counter because it is made seconds before it is eaten.

How this goes wrong

Nitrogen displaces oxygen. In a small enclosed room with no ventilation this is a real safety issue, not a formality — ask the vendor how they handle it and if the answer is vague, put the counter outside.

Every idea here is easier than telling three hundred people about it.
