What a wedding caterer must get right for a Jain wedding

Treating "Jain" as "remove the onion". The root-vegetable rule eliminates the potato base that most Gujarati caterers build their gravies and their farsan around, and a kitchen that has not rebuilt those recipes will serve something bland and apologise for it all evening.

The requirements

Specific and checkable. Take this list to any wedding caterer in your city.

  • No onion and no garlic in any dish, including the base masalas and the chaat counters
  • No root vegetables — potato, carrot, beetroot, radish, ginger, turmeric root — because harvesting them destroys the whole plant and the organisms around it
  • Food served and finished before sunset for guests who keep chauvihar, which in a Gujarat winter can mean the main meal is over by 18:00
  • No fermented items and no honey; check the desserts, which is where these usually appear unnoticed
  • A separate kitchen line and separate serving utensils, not the same counter with a different label

Ask them this

Word for word. The answers tell you more than the portfolio does.

  • “Do you cook Jain food in a separate kitchen, or the same one with the onion left out?”
  • “What time can the full meal be served and cleared by?”
  • “What goes into your gravies instead of onion and garlic — and can I taste it?”
  • “Which of your desserts contain honey or gelatine?”
