A traditional matka kulfi cart, or a shaved-ice gola cart with real syrups. Nostalgic for the older guests and novel for the children, which is a rare combination.

How this goes wrong
Melt rate. A kulfi cart with no proper cold storage is a puddle by the second hour — check they are bringing a working freezer unit and not just an insulated matka.
